In the first map a statewide Choropleth Map shows the 2009 Participation Rate followed by Reading and Math mean scores.  State colors depicted on the map are labeled in the legend for ease of use finding the stats for all states. This design keeps the map from being cluttered and to much information being used on the map.  The second map is just a Choropleth Map depicting Participation Rates for 2009 by state.

Wind speed in this area is gauged to be outstanding. Site is off shore, yet is believed to be navigable for shipping lanes in the area.

Hispanic Population within Southern Florida

My experience with Adobe Illustrator was less than and I would not try to explain how-to in this program. I feel that it is more un-user friendly than Arc though I am partial. I guess it takes some getting use to!

Escambia county map classified by equal interval, quantile, standard deviation, and natural break.

Equal Interval should be the easiest for a viewer to read in my opinion.
